Milk. How do you like yours? Smooth, creamy, light, clean, luscious, rich, A1 or A2?

Most milk as sold as red, green or blue so you’ve never been able to choose the taste or where your milk comes from, or the type of cow.  All you get to choose is the fat content.

This is a great situation for the retailers, but it leaves the suppliers disconnected from their customers and disempowered. While consumers are short-changed and equally disempowered.

There’s a milk war going on in the UK with milk farmers fighting just to get the cost of production for their milk and their numbers are steadily dwindling. It’s high time that we stopped thinking of  milk as a low value ‘commodity’ and started to appreciate – and pay for – quality.

But what is quality ? That’s the question we aim to get to grips with in Raw Milk 2 – a tutored tasting devoted to high quality and raw white stuff, as well as cream, butter & yoghurt made from the milk.

We will be asking what difference does the breed make? You will get to compare milk from Holsteins, with Jersey, Guernsey, Shorthorn & Ayrshire milk. These are supposedly the premium breeds whose milk has the highest levels of butterfat. Do we like butterfat?

And what difference does processing make? All milk in the supermarkets is pasteurised & mainly homogenised. All the milk in this tasting is raw and untreated as is the cream and butter. So in the interests of open and fair competition we will also taste the winning raw milk against the winner of the best supermarket milks.

Subjecting their products to your scrutiny will be Dave Paull, John Barron and Ruth Kimber; all dairy farmers who are finding markets for quality.

Overseeing it all we have Nick Barnard of Rude Health. To say that Nick is interested milk would be an understatement. He is dangerously obsessed.  For the Raw Milk session he has devised a fiendishly complex and comprehensive points system. There will be blind tasting. There will be votes. And there will be winners.
